Domaine Marc Morey was established in 1919 by Ferand Morey and has been passed through the generations through his son Marc, to the current young and talented winemaker Sabine Mollard, the daughter of Bernard Mollard and his wife, who is Marc Morey’s daughter. The old cellar lies under their magnificent home, which was a former coaching inn and Marc Morey’s family home for 100 years. Domaine Marc Morey’s wines have become world-renowned since the mid-nineties, producing some of the finest Chassagne Montrachets.
The 30 years old vines are trained according to the Guyot system. Great emphasis is placed on working with nature, rigorous debudding and green harvesting to ensure that the vines growth is perfectly balanced. the vineyards are tended according to “la lutte raisonnée” principle of using sustainable agricultural methods and only minimum treatments as required. The complex soil structure is made up of marl, limestone, clay and gravel.
Fermentation began in temperature-controlled tanks. The semi-fermented juice was transferred into oak barrels, of which 25% to 30% were new, to continue fermentation. The wines were then matured for 10-12 months in oak barrels.
This Chassagne Montrachet is elegantly styled with a complex bouquet, wonderful minerality, toasty balanced oak and a long, supple finish. White Burgundy at its finest expression.
